Nothing says Fall like warm apples baking in the oven on a crisp chilly day. The oven is bursting with powerful aromas like cinnamon, nutmeg and orange zest and involuntarily sends them throughout your house. Here is a recipes that is sure to please and leaves you feeling less guilty than a traditional sugar filled recipe. By using spices and citrus that bring out the sweet and sour flavors of the apples you don't need as much sugar. Win, win!
8 granny smith apples, 1/2”-1” dice
Zest and juice of 1 lemon
1 teaspoon orange zest
1/4 c coconut sugar
2 teaspoons cinnamon
1 teaspoon nutmeg
1 1/2 c flour
3/4 c coconut sugar
1 1/2 c old fashioned rolled oats
1/2 tsp kosher salt
1 c coconut oil
Preheat your oven to 350F.
For the filling core and dice the apples. Peeling is optional. adding citrus zest and juice. Add sugar, cinnamon and nutmeg. Stir all to incorporate. Put a thin layer of coconut oil (will melt with the warmth of your hands) in a 9x13” pan. Pour filling in the pan.
For the topping grab a large mixing bowl and add flour, sugar, oats and salt. With a fork mix the coconut oil in and stir until it resembles a crumble topping. Sprinkle the topping over the filling, slightly pressing it into the apple mixture. Place in preheated oven and bake for 45 minutes to an hour or until topping is slightly brown.
