Cashew Milk

1 1/4 cup raw unsalted cashews

4 cups water

4 soft dates

2 tsp vanilla extract (optional)

Mix all ingredients in a glass jar or in your blender with a lid on and let soak for 4-6 hours.  Blend on high for 1-2 minutes. My Vitamix makes a nice creamy result. Store in refrigerator and shake before each use.  

You can also spice this milk up with 1/2 tsp cinnamon or a 1/2-1tsp Chai mix.

Chai Spice mix: 1tsp cardamom, 1tsp all spice, 2tsp cinnamon, 1tsp clove, 3 tsp ground ginger for a Chai Cashew milk. 

If you are trying to avoid dairy this milk is a great replacement! Can be used solo, in recipes or in your morning cup of joe!
