Portland Style Granola
2 egg whites, whisked 1/2 c coconut sugar 1/4 c coconut oil, room temperature 1/4 c maple syrup 1 Tbsp vanilla extract 1/2 tsp sea salt 5 c old fashions rolled oats
Mix all the ingredients except the oats until well combined. Stir in oats. Spread evenly on a rimmed baking sheet. Bake at 325F for 30 minutes total. Toss 15 minutes into baking.
When done baking for 30 minutes (until lightly browned) toss in 1/4 c each; raw pistachios, raw pepitas, dried tart cherries and dried blueberries. Allow the mix to completely cool and then store in a sealed container.
